Mediterranean Vegetable Sauce

This Mediterranean vegetable sauce is both healthy and delicious and pairs perfectly with pasta too.

Ingredients

  • 1 large onion (white or red)
  • 1-2 sticks of Celery
  • 1 large garlic clove
  • 2 courgettes
  • 1 large red pepper
  • 1 tin of chopped tomatoes
  • 1-2 tablespoons of tomato paste
  • Olive oil
  • 1-2 dessert spoons of Three Basil Mix
Optional
  • Salt and pepper

Vegetables can be chopped finely or chunky according to preference.


Method

Step 1

Chop the onion and put in a sauté pan with a serving spoon of oil over a medium heat.

Step 2

Chop the celery and add to the pan and fry until the onion starts to turn translucent, add in chopped garlic and stir.

Step 3

Add in the chopped courgette and chopped red pepper.  Cook for 5 minutes or until the vegetables start to soften.

Step 4

Add the Three Basil Mix (we like it herby so always add more rather than less) and stir.

Step 5

Add the tomatoes and stir, leave to simmer for 15 minutes then mix in the tomato paste to finish.

 

This Mediterranean vegetable sauce always tastes better if left for the next day. We usually mix it with the pasta then put grated cheese on the top and grill to make it a bit decadent.
